Fresh Albacore has a mild to medium flavor profile with firm flesh and large flakes. Like other tunas, it has a “steak-like” texture, but less firm than Yellowfin or Bigeye Tuna. It has a higher fat content which gives it a richness of taste. Albacore Tuna works great for pan-searing or for canning.

Blue Point Oysters are one of the most popular oysters from the east coast. Blue Points are roughly three to four inches in diameter with a relatively round shell, pronounced cup and are known for their mildly salty flavor and distinct pine and anise notes. These live oysters are best on the half shell or on the grill with garlic butter.
Buckley Bay Oysters are a fabulous oyster from the shores across from Denman Island in Baynes Sound on the Eastern side Vancouver Island in British Columbia. Buckley Bay oysters have firm meats with a medium brininess, a crisp clean flavor and light melon finish.

Black Cod is a deep water white fish known for its high oil content and rich, delicious flavor. Black Cod, also known as Sablefish or Butterfish, is a moist and delicate fish with a distinctive sweet flavor. It is a very forgiving fish that can be cooked broiled, pan-roasted or baked. Black Cod is an excellent source of protein, essential fatty acids, and a wide variety of vitamins and minerals.
