Hiramasa, or Yellowtail Kingfish fillets are elongated with a med/large flake and robust texture. Raw Kingfish meat has a beautiful pink tinge, which cooks up white, and exhibits great-tasting moist, thick and flavorful flesh. Due to their texture and great taste they can also used raw for Sushi, or be cooked virtually every way possible, including baked, poached, curried, and sautéed.
