Opah, also known as Moonfish, has a firm oily texture that melts in your mouth. Due to its firm texture, it's great for the grill or seared in a pan. Opah has a rich, creamy taste, the flavor is a cross between tuna and swordfish — distinctive but not overpowering. This wild-caught Opah is coming out of Fiji.
