This fish was harpooned just days ago at the Channel Islands off the coast of Santa Barbara aboard F/V Sharon G.
Its loin is mild, yet slightly sweet with a pinkish-orange flesh when raw that turns beige once cooked. This fantastic fish is the ultimate option for fresh Swordfish lovers.
