King Kampachi is a species of Yellowtail Jack, it is farmed in the clean clear offshore waters of Panama. It is great for sushi or sashimi applications it is very similar to its cousin Hamachi in flavor. It is flavorful and rich with a firm texture, it is high in omega-3 fatty acids and great to cook with.
